“What’s Cooking” with Channel 7: Turkish Passover Cake

Channel 7 joined us in the kitchen this week to cook a traditional Turkish Passover cake. Click here to watch the video, or try the recipe at home!

Turkish Passover Cake

Ingredients
6 eggs, separated
1 cup sugar
3/4 cup almond flour
Juice and zest of 1 orange
1 & 1/2; cups walnuts (or pecan, or pistachio), toasted and chopped
Oil and matzo meal for baking

Directions:
Preheat oven to 350 degrees.
Beat the egg yolks with sugar until well mixed and pale in color.
Add almond, meal, orange juice, orange zest and walnuts. Mix well.
In a second bowl, beat egg whites until stiff, then fold into egg yolk and nut mixture.
Oil a 9-inch spring form cake pan and dust with matzo meal. Pour batter into pan.
Bake 1.5 hours.

On Sunday, April 20th, 2014, Beacon Hill Hotel & Bistro will be offering a special, prix fixe Easter Brunch perfect for families and friends alike. From 10:00AM to 4:00PM diners can indulge in festive fare such as Arugula Salad topped with candied hazelnuts and lemon vinaigrette, Tamworth Ham with a maple mustard glaze, Vermont Lamb Shoulder with mint pesto, and a selection of house-made desserts that would make even the Easter Bunny come out from hiding! Passover Dinner

In celebration of Passover, Beacon Hill Hotel & Bistro will be offering, in addition to our regular menu, a special Passover menu on Monday, April 14th and Tuesday, April 15th, 2014 from 5:30PM to 11:00PM. Executive Chef Josh Lewin will be featuring selections such as Matzo Ball Soup, Braised Brisket and Turkish Passover Cake. The dishes are available as a multi-course prix fixe for $42 per person or a la carte. Reservations are strongly suggested and can be made by calling 617-723-7575.

St. Patrick’s Day Celebration

On March 17th, 2014, Beacon Hill Bistro, usually known for our French-inspired cuisine, is
traveling to the Emerald Isle and offering a multi-course dinner menu featuring unique takes on traditional Irish cuisine in honor of St. Patrick’s Day. Executive Chef Josh Lewin’s multi-course dinner is $43 per person (tax, beverages and gratuity not included). The menu will be offered on Monday, March 17th, 2014 from 5:30PM to 11:00PM. Pi Day

Satisfy your sweet tooth while feeding your inner mathematician, with a slice of pie. Join Beacon Hill Hotel & Bistro in celebration of “Pi Day.” Pi Day is celebrated on March 14th each year since 3, 1 and 4 are the three most significant digits of π in the decimal form. A toast to the beginning of the famous sequence of numbers, on Friday, March 14th, 2014, (3.14) we will be offering a slice of pie for only $3.14 during breakfast service served from 7:00AM to 10:00AM and lunch service served from 11:30AM to 3:00PM.

Celebrated by math enthusiasts around the world, the U.S. House of Representatives officially recognized Pi Day in 2009.  Just as Pi represents the relationship between a circle’s diameter and its circumference,  Beacon Hill Hotel & Bistro represents the relationship between quaint atmosphere and exquisite taste. Take a break on this “Pi Day” to savor genius and dessert alike!

This winter Executive Chef Josh Lewin is resurrecting dishes of days past which will appear as weekly specials in celebration of #TBT, or #ThrowbackThursdays– the name of a weekly theme that social media users use to post general “throwback” content.

This week’s first #TBT special came as a suggestion from fellow twitter users who posed the idea of recreating the now gone Locke-Ober dish, “Lobster Savannah.” Missed it? We’ll be doing something similar every Thursday, and the special will be available for that dinner service only. Have a dish you want to see again?
